Chicken Tikka Masala Recipie

In the last recipe for Chicken and Ham Pie we spoke about using food to stay warm in winter. But an extra way to stay a little bit warmer is add heat from a bit of spice in your food.

Invented in Glasgow, (if the stories are believed) Chicken Tikka Masala is a ‘British’ dish with Bangladeshi influences and is amazingly popular in the UK. It was even declared a “True National British Dish” in 2001 by the Foreign Secretary at the time.

So, let’s look at a simple, fairly healthy recipe for Chicken Tikka Masala

Chicken & Ham Pie

Who doesn’t like a nice hot pie? As we move through Winter our thoughts turn to a piping hot home cooked meal, indoors, out of the cold. We maybe think thick chunky soup, a classic roast with Potatoes, Carrots and Gravy...  or maybe something special like a hot leftover turkey sandwich with Mayonnaise or Cranberry sauce.

But, very few meals can be topped for the feeling that a traditional British pie gives you. When the smell pours out once you dig your fork into the pastry for the first time...

It’s no surprise we like meat here, so we’re going to but two meats into one Pie; Chicken and Ham.

Hot Beef Crostini

Recently we posted a recipe for Mini Beef Tartlets for the group that likes to graze all day on Christmas. But not everyone likes to snack across the day so on a day when breakfast is usually taken a little earlier and dinner is a little later, there is a gap for something to tame the hunger.

With that in mind, here is another recipe that straddles the line between snack and starter which can either be served prepared, or laid out for guests to assemble.

Mini Beef Tartlet

For most families on Christmas day, eating doesn’t start with a normal breakfast followed by dinner at dinner time. The nibbling and snacking usually continues through the morning with sausage rolls, mince pies and whatever else was ‘supposed’ to be put aside for the evening meal.

But, it’s also important to have something for your guests to nibble on, especially family members who come early to get involved in the giving and receiving of gifts and to enjoy the day.

So why not make something a little bit special?

Pork Loin with a Guinness & Honey Glaze

Not only are Pork Loins lean and juicy, they are also quite easy to prepare.

You can simply carve this up with veg and have a decent meal right there with no additional work needed.

But if you have a little extra time, adding a glaze to these great pieces of meat can really make the meal.

This glaze combines the sweetness of honey with the bitterness of Guinness, and maybe adds a little something extra too (We’ll leave that up to you!)

Easy Shepherd’s Pie Recipe

A Shepherd’s Pie is a recipe that’s over 200 years old and in the 1700’s used cheap ingredients such as the leftovers of a Lamb Roast and self grown vegetables including the all important and easily available potato.

There are many variations including Cottage Pie (Mince Beef), St Stephen’s Day Pie (Turkey and Ham), Cumberland Pie (Topped with Breadcrumbs) and Fish Pie (Usually Cod or Haddock).

But it’s the Sheppard’s Pie that has is the most popular and is generally used to name any minced meat pie topped with potato.

Let’s take this pie back to basics with a quick, fuss-free version.

Spaghetti Bolognese Recipe

Everyone enjoys a good Spag Bol but what makes the meal is a good Bolognese sauce. The best thing about this recipe is that not only is it easy to make and fun to east, but you can sneak in plenty of veggies.

This makes the recipe healthy and it can be used to increase the vegetable intake for children that usually don’t like them.

So below is our recipe for Bolognese Sauce containing Onion, Celery, Tomatoes and Olives.
